In the eighteenth century scones grew in popularity with the English. It become a traditional treat with afternoon tea in England. Scones came to America by Scottish settlers, still enjoyed by many.

Is There a Difference Between American and English Scones?
An American scone is shaped into a seven-eight inch circle, and cut into eight triangles. Usually accompanied with fruits, chocolates, a frosting or glaze, and very much on the sweeter side.

An English scone is round in shape, typically two inches wide. Less sweet, served with fruit toppings, jams, and whipped cream.

Start by preheating your oven to 375F. Spread some parchment paper on a cookie sheet.

In a medium to large mixing bowl, mix together the flour, baking powder, and salt.

Now you will want to grate frozen butter. Then add the grated, frozen butter, to the flour mixture. Work together with your hands until the mixture becomes a crumble.

Add in cream, cranberries, egg, honey, and orange zest. Gently mix with rubber spatula or work with hands.

Scrape the dough on a floured surface, sprinkle some flour over the dough and on hands. Gently pat and shape the dough until you have formed a 7″ circle. Cut into 8 wedges.

Place scones on cookie sheet about 2″ apart. Put in oven and bake for 20-22 minutes or until golden brown. Transfer to a wire rack to cool.

In a small bowl, add in the powder sugar, vanilla, and fresh orange juice. Whisk together! Slowly add the orange juice and check consistency of glaze. Drizzle over scones, then sprinkle your extra orange zest over glazed scones for presentation.

Ingredients

  • 2 1/4 cups of gluten-free flour, plus more for work surface.
  • 1/2 cup honey
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups fresh cranberries
  • 1/2 cup frozen salted butter, grated
  • 2/3 cup cold heavy whipping cream or half and half
  • 1 large egg
  • 1-2 tbsp orange zest (grate some extra for sprinkling over scones)
  • Glaze:
  • 1 1/2 cup powder sugar
  • 1 tsp vanilla
  • 1 tbsp orange zest
  • 4 tbsp of freshly squeezed orange juice, check consistency of glaze after the first tbsp, if it is to thick add the second

I use Namaste Foods Gluten-Free Flour, It has been my favorite gluten-free flour. We find it at our local Costco at a great price.
